Food Safari is proud to announce a brand new course, Urban Foraging in a Day. A unique course combining wild food foraging in north London, with a wild food cookery demonstration and delicious wild food lunch.
You will discover the abundance of wild food in the city and learn the dos and don'ts of urban foraging. On a foray around Stoke Newington we will find berries including elder, blackberries, hawthorn, rosehip, wild apples; if we're lucky some mushrooms; and other green wild foods*.
The course takes place on Saturday 15 September under the guidance of wild food expert, Nick Saltmarsh.. Nick was a professional forager for many years and gathered wild mushrooms and other foods for top London restaurants from Le Gavroche to Aubergine.
After a morning in the wilds of North London, we'll take our finds back to cookery teacher, Anna Colquhoun, The Culinary Anthropologist, who will demonstrate how to cook and preserve our finds and provide delicious wild food lunch with wine. We will also get to taste some of Anna's legendary homemade liquors!
You will take home some of the hedgerow jelly you have helped Anna to make, a pack of tips and recommendations for foraging in towns and cities, as well as some inspiring recipes.
This is a great introduction to foraging in the city. You'll gain confidence to identify wild food and know where to pick it safely and legally. You'll discover some inspiration recipes for wild food and take home a pack of recipes to try at home.
* Of course it's up to nature and the variable seasons what we actually find and will make on the day. The day will be more about identifying wild foods than picking huge amounts!
